MBP- Pf Ctr369Nt-Sinhibits the copper-catalysed oxidative degradation of ascorbate. Ascorbate does not auto-oxidize when exposed to air (indicated by the light gray circle). The addition of CuCl2 catalyses the oxidation of the ascorbate solution (indicated by the dark gray diamond), with this oxidation rate reduced by the inclusion of MBP-Pf Ctr369Nt-S (indicated by the light gray triangle). MBP (indicated by the dark gray square) did not prevent the copper-catalysed oxidation of ascorbate.
